Pu-erh tea is famous for its purported medicinal qualities. The taste has been described as mellow, however those not accustomed to the taste might call it "old", "elemental", coating of mold - hence the musty character. The older the pu-erh, the more prized it is. Interestingly, it takes on a milder character the older it gets.
Young Pu-erh - A character described as elemental. The tea leaves come from the 'Dayeh' variety closely related to the original tea tree.

The production of white tea is different from other tea. The leaves come from special varietal tea bushes and are not processed but are dried and withered in the sun. (If mechanical drying is required the leaves are baked (not fired) at temperatures less than 40 C.) Only special 'two leaves and a bud' are selected with the ideal being two leaves wrapped around a newly developing shoot. After withering and drying these leaves are then painstakingly selected and sorted by hand.
Sowmee - Visually not a typical white tea, since it is sun dried after special hand rolling. It's pleasant, toasty character is astringent and full flavored.
